Apple Walnut Date Oats

Ingredients:

1/2 cup rolled oats

1/2 of a Medjool date

1/2 an apple of your choice (I used Fuji)

1/4 cup water

1 tsp cinnamon

Cut the apple into half inch wide slices and place in a cooking pot on the stove. Finely chop the date and add to the pot along with the water and cinnamon. Cook on medium-low and allow to simmer until the liquid thickens and forms a paste and the apples soften, about 8-10 minutes. If you notice that the liquid is thickening quickly and the apples are not yet soft, you can add additional water in increments of 1 Tbsp.

While the apple mixture is cooking, cook the oats with water or nut milk however you normally make oatmeal, whether that is in the microwave or on the stove.

Once the apples are soft enough that you can cut through them with a spoon, remove from heat. Combine the apples and date paste that has formed in the pot with the oatmeal. Top with chopped, raw walnuts, raisins and all natural peanut butter.
