This week, I made some of my “tried and true” favorites – the meals I come back to time and time again because they never disappoint. A few require extra prep time (pizza dough and falafels) but the more you make them, it becomes second nature.
Menu:
- Monday/Tuesday: Loaded Baked Potato
- Wednesday/Thursday: Bonberi Kimchi Pancakes w/ basmati rice
- Friday: Pizza
- Saturday/Sunday: Minimalist Baker’s Falafel w/ Dill Yogurt Sauce and Pita (store bought)
Prep Tip:
The baked potatoes can be roasted a day in advance. They don’t require a lot of attention, just about an hour or so to cook while you’re nearby.
The falafels require 2 hours of refrigeration prior to cooking so be sure to plan for that. They can be made in advance and frozen until ready to cook.
